Tonic are pleased to partner with University College Birmingham on their new commercial restaurants, and are recruiting a Chef de Partie for Beyond in Birmingham City Centre. Beyond is a commercial restaurant. It is not a training site and you will not be teaching. Mornings run an all-day offering built around excellent coffee, then at 17:00 the kitchen moves into a serious evening menu with a proper drinks offer alongside it. As Chef de Partie you will run your own section across both, which is a lot more interesting than one menu cooked the same way every shift. It is also a genuinely good place to get better, because the development behind it is funded rather than promised.

What are we looking for from Chef de Partie candidates?

• Experience as a Chef de Partie, or a strong Commis ready to step up, in a fresh food kitchen
• Able to run a section on your own through a full service
• Comfortable learning and holding two different menus
• Good on prep, mise en place and controlling wastage on your section
• Sound on food safety, allergens and cleanliness
• Reliable, on time, and someone the rest of the brigade can count on
• Available across a seven day operation, including evenings and weekends
