Tonic are searching for a Bar Manager to join Beyond, University College Birmingham’s new all-day restaurant and bar in Birmingham City Centre. Beyond is a commercial operation. It is not a training site and you will not be teaching. The bar here has two jobs. From the morning it sits behind an all-day offering built around excellent coffee, and from 17:00 it becomes a proper evening drinks offer alongside serious food. You will own the list, the specs, the stock, the GP and the training of both the bartenders and the baristas, and because this is a pre-opening role you are writing all of it rather than inheriting it.

What are we looking for from Bar Manager candidates?

• Experience as a Bar Manager, or a strong Assistant Bar Manager ready to step up, in a quality-led bar or restaurant
• Able to write and cost a drinks list, not just deliver someone else’s
• Real ownership of ordering, stock, wastage and GP
• Credible on speciality coffee, or genuinely willing to learn it to the same standard as the bar
• A trainer of bartenders and baristas who holds a standard rather than hopes for one
• Personal licence holder, or willing to obtain one
• Available across a seven day operation, including evenings and weekends
