General Manager | Birmingham | £50,000 + profit share + circa £4,000 tronc

What’s in it for the successful General Manager?

  • Salary of £50,000 per annum, plus a share of the profit
  • Tronc of circa £4,000 per annum on top
  • 45 hours per week, permanent
  • 28 days holiday including bank holidays, rising by a day for every year of service
  • 5% contributory pension, and Wagestream so you can draw your pay as you earn it
  • Staff meal on duty and staff discounts
  • A pre-opening role, so the standards in the building are the ones you set
  • The financial security of a university behind a restaurant that trades like an independent
  • Training and development with a university’s resources behind it, which is a very different thing to a line on a benefits list
  • Genuine progression across a group of sites
  • Post-placement support from Tonic

Tonic are pleased to partner with University College Birmingham on their new commercial restaurants, and are recruiting a General Manager for Beyond in Birmingham City Centre. Beyond is a commercial restaurant. It is not a training site and you will not be teaching. It is two operations in one room, an all-day offering built around excellent coffee from the morning, then at 17:00 the room changes character into serious food with a genuine drinks offer behind it. As General Manager you own both of those services, the P&L, the team you build and the standards you hold, with a Head Chef already in post alongside you. Opening a site is rare enough. Opening one with a university’s investment behind it, and more than one site to grow into afterwards, is rarer.

What are we looking for from General Manager candidates?

  • Experience as a General Manager, or a strong Assistant General Manager ready to step up, in a quality-led restaurant
  • Comfortable owning a P&L with real control of labour, stock and GP
  • Experience of an operation that trades across both day and evening, or the confidence to build two distinct services in one room
  • Pre-opening or new site experience, or the appetite for it
  • A recruiter and developer of people, with the retention to show for it
  • Credible with a coffee and drinks offer as well as with food
  • Hands-on and visible on the floor rather than office-bound
  • Available across a seven day operation, including evenings and weekends
