Tonic are searching for a Junior Sous Chef to join Beyond, University College Birmingham’s new all-day restaurant in Birmingham City Centre. Beyond is a commercial kitchen. It is not a training site and you will not be teaching. The daytime offering is built around excellent coffee and food to match, then at 17:00 the kitchen shifts into a serious evening menu, so the range you get here in a week is wider than most sites give you in a year. As Junior Sous Chef you will take charge of sections, run shifts when the seniors are off, and take on ordering and prep planning as you grow. If you are a strong Chef de Partie who has been waiting for someone to actually invest in you, this is the one to look at.

What are we looking for from Junior Sous Chef candidates?

• Experience as a Junior Sous Chef, or a senior Chef de Partie ready for the step up, in a fresh food kitchen
• Able to run a service shift and hold the standard without the Head Chef on the pass
• Comfortable on any section, and quick to pick up a new menu
• Understands prep planning, ordering and wastage
• Willing to lead and train commis chefs and kitchen porters properly
• Solid on food safety, allergens and kitchen discipline
• Available across a seven day operation, including evenings and weekends
