Tonic are assisting our client in their search for a Head Chef to lead the kitchen at their village gastro pub in North East Hampshire. It’s a characterful, beamed pub with a restaurant, a large garden and covered outdoor dining, and the kitchen serves from breakfast through to dinner every day. Summer garden trade and Sunday lunch are big parts of the week. The food is fresh and seasonal, cooked from scratch with British meat, on menus that change with the seasons. You will run the kitchen and the brigade, and be accountable for GP and standards, backed by a group Executive Chef team and a business that develops its people properly.

What are we looking for from Head Chef candidates?

  • Head Chef experience, or a strong Senior Sous Chef ready to step up, within quality-led, fresh food pub or restaurant kitchens
  • Comfortable running an all-day kitchen, from breakfast service through to evening à la carte
  • Confident handling busy weekends, Sunday lunch and peak garden trade without standards slipping
  • Commercially aware, comfortable owning GP, labour and stock
  • Strong on food safety, allergens and kitchen compliance
  • A leader who trains, develops and keeps hold of a brigade
