Tonic are searching for a Restaurant Manager to join University College Birmingham’s new neighbourhood restaurant in Harborne. This is a commercial restaurant. It is not a training site and you will not be teaching. The food is small plates built on exceptional produce, taken seriously but served in a relaxed room, and the site trades Wednesday to Sunday only. That gives you something almost nobody at this level gets, which is the same two consecutive days off every single week, and it makes the job a genuinely sustainable one. As Restaurant Manager you will hire the floor team, set the service standard and own the day to day running of the room, with a Head Chef already in post and a group of sites to move into afterwards.

What are we looking for from Restaurant Manager candidates?

  • Experience as a Restaurant Manager or a senior Assistant Manager in a quality-led, food-led restaurant
  • Confident running the room from open to close and being accountable for it
  • Strong on rotas, labour, stock and cost control
  • Able to recruit and keep a floor team together, not just fill a rota
  • Comfortable with a small plates service style and able to train a team to talk about the food properly
  • Visible in the room, hosting rather than hiding
  • Available Wednesday to Sunday, including evenings and the Sunday daytime service
