Tonic are pleased to partner with our client to recruit a General Manager for a well-established independent restaurant and cocktail bar in Rothley, Leicestershire. The business is performing strongly, turning over £30,000 to £40,000 a month through the restaurant alongside a growing takeaway trade, with a full cocktail bar ready to be properly activated. The owner is clear about where this is going: bring in the right GM now, build the operation correctly, and the next step is a director role overseeing multiple sites. What are we looking for from General Manager candidates?

• Solid GM experience across food and beverage, restaurant and bar operations ideally
• Genuinely comfortable with P&L ownership, not just aware of it. You need to be someone who lives in the numbers
• Strong systems and spreadsheet confidence, reporting, forecasting and performance tracking
• A natural unifier. The next GM needs to bring a divided team together, front and back of house working as one
• Experience developing junior staff who have the ability but need proper leadership
• Commercial thinking around underperforming revenue lines, specifically bar activation and cocktail trade
• Ambition that matches the owner’s. The director conversation is real, and the right person will be ready for it
