Tonic are pleased to partner with our client to recruit a Head Chef for their village pub and restaurant in South West Hertfordshire. It’s a historic, fully refurbished pub with an eatery, a bar and a large garden, in an affluent village where the guests expect the food to be right every time. It’s seasonal, cooked from scratch, with premium produce and menus that change through the year. You will run the kitchen and the brigade, and be accountable for GP and standards, backed by a group Executive Chef team and a business that develops its people properly.

What are we looking for from Head Chef candidates?

• Established Head Chef experience within quality-led, fresh food pub or restaurant kitchens
• A cook first, with the skill and consistency to deliver a premium seasonal menu to a discerning local crowd
• Confident handling busy weekends, Sunday lunch and summer garden trade without standards slipping
• Commercially aware, comfortable owning GP, labour and stock on premium ingredients
• Strong on food safety, allergens and kitchen compliance
• A leader who trains, develops and keeps hold of a brigade
