Tonic are searching for a Head Chef to join our client’s gastro pub in South Hertfordshire. It’s a busy community pub with a large restaurant, a garden and private dining, so the kitchen covers weekday lunches, packed weekends, Sunday service and functions. The food is fresh and seasonal, cooked from scratch with British meat and a menu that moves with the year. You will run the kitchen and the brigade, and be accountable for GP and standards, with a group Executive Chef team behind you and a business that develops its people properly.

What are we looking for from Head Chef candidates?

• Head Chef experience, or a strong Senior Sous Chef ready to step up, within quality-led, fresh food pub or restaurant kitchens
• Confident running a high-volume weekend and Sunday service without standards slipping
• Commercially aware, comfortable owning GP, labour and stock
• Strong on food safety, allergens and kitchen compliance
• A leader who trains, develops and keeps hold of a brigade
• Experience of private dining or functions alongside à la carte would be an advantage
